Annie's Primal Tuna Cakes

4 cans albacore (7 oz. each)6 large eggs1/2 large onion, petite dice if possible5 whole grain saltines, smashed up4 Tbsp grated parmesan cheese1/4 tsp black pepper2 heaping tsp Chesapeake Bay seasoning (like Old Bay)Chipotle Mayo for topping (see Annie's Make-yer-nose-run Mayo)
Preheat oven to 350-375 F.
1. Drain the tuna. Combine tuna, eggs, diced onion, cracker crumbs, parmesan, pepper, and Old Bay seasoning. Mixing with hands works the most effectively.
2. Once thoroughly combined, form palm-sized patties with the mixture. Mixture will feel a bit crumbly, but have faith! :) Place on a cookie sheet that has been sprayed liberally with non-stick spray. Make patties until all of the mixture has been used up.
3. Cook for 15 minutes, then cook under the broiler until the tops are browned to your liking.
4. Top with Annie's Make-yer-nose-run Mayo, a mild salsa, or maybe tartar sauce?
