Cucumber Canoes with Tuna

Ingredients
* Cucumber (peeled), 2 large (8-1/4" long) * Mayonnaise, regular (mayo), 2 tbsp * Peas, canned, 1 cup * Salt, 1 dash * Pepper, black, 1 dash * Tuna, Canned in Water, 1 can
Directions
Cut peeled cucumbers in half from the long side, with a spoon remove the seeds and set them aside.
In a bowl, mix the rest of the ingredients, starting with the drained canned tuna, adding the mayo, the peas, the salt and pepper. Incorporate it well and then put the mix inside the canoe shaped cucumbers.
You can serve them long or you can cut the canoes in half.

    When I make these again, I'll make sure to keep the cucumber and tuna salad separate until immediately before eating. Unfortunately I made these in the morning before work, and by lunchtime the salt in the tuna had wilted the cucumber to a very rubbery texture. Otherwise it was great! - 4/26/08
