quinoa salad with ginger peanut dressing

Ingredients
1/4 c dry quinoa1 c shredded red cabbage1 diced red bell pepper1/4 red onion, diced1 c grated carrots1/4 c chopped scallions1/2 c cashews1 c edamae1 oz lime juicePEANUT SAUCE1/4 c peanut butter, smooth2 tsp grated ginger root3 tbsp soy sauce1 tbsp red wine vinegar1 tsp olive oil1 tbsp honey1 tsp sesame oil
Directions
cook the quinoa and edamame until done, cool. combine shredded cabbage, diced bell pepper, diced red onion, shredded carrots, cilantro, scallions, and cashews.

make sauce by microwaving peanut butter and honey together for 15 seconds. add remaining ingredients, wisk, and add to quinoa.

add quinoa to vegies, sprinkle with a little lime, and enjoy :)
