Carrot Spice Bread

Ingredients
3/4 cup Fiber One Cereal1 1/3 cups white flour1/2 cup no calorie Splenda1 1/4 teaspoon baking powder1 teaspoon pumpkin pie spice1/4 teaspoon salt1/4 teaspoon baking soda2 Tablespoons lemon juice2 Tablespoons Canola oil1 teaspoon grated lemon peel1 cup carrots1/2 cup water1 egg
Directions
Heat oven to 350*. Grease loaf pan. Put Fiber one in blender and blend until fine, Stir together flour, Splenda, baking powder, spice, salt and soda in large bowl. Stir in ceral. Beat remaining ingredients until well mixed and stir into ceral mixture until just moistened. Pour into loaf pan. Bake about 1 hour and 10 minutes until toothpick inserted in center comes out clean. Let cool and remove from pan. Slice and eat.
