Whole-Wheat Apple Cinnamon Muffins

2 cups whole-wheat pastry flour2 teaspoons baking soda2 egg whites1/2 cup honey1/4 cup safflower oil3/4 cup milk (almond, soy, rice or cow)1/2 cup unsweetened applesauce2 medium apples, peeled and chopped2 teaspoons cinnamon
1. Preheat oven to 350 degrees F.
2. Mix flour, cinnamon, apples and baking soda in a bowl.
3. Whisk together egg whites, honey, oil, milk and apple sauce in another bowl.
4. Pour the dry ingredients into the wet ingredients and mix well.
5. Spoon mixture into lined muffin tins and bake for 15-20 minutes.
Serving Size: Makes 16 muffins
