Cabbage Sweet Potato Stir Fry

1 Sweet Potato peeled and cubed small1/4 head of cabbage shredded1 cup of frozen peas1 tbsp soy sauce
Lightly coat cubed sweet potato with cooking spray in 400* oven for 1 hour, tossing them around once or twice during cooking to get color on all sides.
Lightly spray a pan over medium heat and add peas.
1 minute later add potatoes , toss together then add cabbage. Cook covered for 5 minutes stirring often. If it starts sticking, sprinkle some water over it and stir.
When its almost done, add soy sauce and cook covered for 2 min
Serving Size: 2 very large servings
