Shrimp with Sweet Pineapple Rice - From Nutrisystem.com

Ingredients
2 tsp vegetable oil3/4 cup brown rice12 oz shrimp1 small red bell pepper1/2 cup red onion1 tbsp soy sauce1 - 8 oz can pineapple1 3/4 cups chicken broth
Directions
1. Heat oil in medium pan

2. Saute peppers and onion about 5 minutes stirring occasionally.

3. Add rice to pot with veggies, stirring to coat the rise with oil.

4. Add chicken broth, pineapple and soy sauce to pot.

5. Add rice to pot and cover. Bring rice to a boil, then reduce heat and simmer on low for about 20 minutes or until rice is hot.

6. Turn off heat.

7. Add cooked shrimp to pot and reheat for about 5 minutes.
