Vegetarian Stuffed Peppers

1 Green PepperCooked Brown Rice, medium grain, .2 cupCanned Crushed Tomatoes, .25 cup (reserve 2 Tb)Onions, raw, 2 tbsp chopped Garlic, 2 cloves dicedOlive Oil, 1 tspCanned White beans, .2 cupHerbs and seasonings to taste(Recommend italian herbs, salt, pepper or cumin and cilantro for Mexican style)
* Cut top off of green pepper, clean out seeds and dice the meat from the top (discard stem)
* Heat olive oil in a pan and saute onions, diced pepper, and garlic until onions are soft and translucent
* Combine onion mixture, rice, beans, tomatoes, and seasonings and mix well
*Spoon approx. 1/2 cup of the mix into each pepper to fill
*Top with remaining 2 Tb of tomatoes and bake in 350 deg oven for 35-40 minutes until outer pepper is tender

i wnder if you can subsitute kidny beans for the white beans?& use ucles ben flavored seasoned rice. i like to try this. i am a vegetarian. it is hard for me to get ideas for vegetarian dishes,i only been vegetarian for about 12yrs? ty for the idea.iwill try this.& get back to rating your idea. - 3/11/10
