Coconut Crusted Tilapia

Ingredients
4 tilapia fillets, 3.5oz each1 Tablespoon lemon juice1/2 cup dry Italian bread crumbs1/4 cup flaked sweetened coconutCooking spray (Canola used in the calculations)Salt & pepper to taste
Directions
Preheat oven to 425 degrees.
In a small bowl, combine bread crumbs, coconut, salt & pepper. Mix well.
Brush lemon juice on each piece of fish.
Dredge each fillet in the dry mixture and then place fillets on a non-stick baking pan.
Spread leftover crumbs on top of each fillet.
Coat each fillet with cooking spray.
Bake in the oven for 12-15 minutes.

Serving Size: Makes 4 servings at 3.5oz of fish each.
