Low Fat Banana Bread Muffins

Ingredients
3 ripe (or frozen and defrosted) bananas3/4 cup packed brown sugar1 large egg1 tsp vanilla1.5 cup AP flour1 tsp baking soda
Directions
1) preheat oven to 350
2) mash bananas, mix in brown sugar, vanilla & egg
3) add flour and baking soda to bowl
4) mix until combined
5) spoon batter into lined muffin pan filling cups half full
6) bake for about 20 minutes or until toothpick inserted into middle muffin comes out clean

Serving Size: makes 18 mufins
