300gm raw Cauliflower100gm or 10 Cherry Tomatoes40gm Parsley40gm Fresh Mint3 Spring Onions2tbls Fresh Lemon Juice4 Tbls Olive Oil
1. Chop the Cauliflower into a small dice.
2. Process the Cauliflower in food processor until Cauliflower resembles the size of cracked wheat (Burgul). Place into a large bowl.
3. Finely chop the Parsley, Mint and Spring Onions andadd to the riced Cauliflower.
4. Dice the Cherry Tomatoes and add.
5.Combine Olive Oil and Lemon juice and dress the salad.
Serving Size: makes 4 1-cup servings
