High Protein Whole Grain Blueberry Muffins

1 Cup Old Fashioned Oats - dry1 Cup Whole Wheat Flour1/2 Cup Flour, white2 tsp Baking Powder1/2 tsp Baking Soda1/2 tsp Salt1/4 Cup + 1 TBS Splenda Brown Sugar Blend1 Cup Buttermilk, low fat1/4 Cup Orange Juice2 TBS Canola Oil1/4 Cup Egg substitute, liquid (Egg Beaters)1 tsp Vanilla Extract2 Cup Blueberries1/4 Cup Almonds, chopped2 Scoops EAS Lean 15 Protein Powder, Vanilla Cream
Grind oats in blender. Whisk oats, flours, baking powder, soda, salt, protein powder and 1/4 cup of brown sugar blend in large bowl.
Whisk buttermilk, orange juice, oil, egg and vanilla in small bowl and then stir into flour mixture; fold in blueberries. Spoon batter into prepared muffin tins.
Combine nuts and the 1 TBS brown sugar blend and sprinkle on top of batter.
Bake in 400 degree oven for 22 minutes or until toothpick comes out clean. Cool in pan on wire rack for 5 minutes. Remove from pan and cool completely.
