Maple - Candied Salmon

Ingredients
1 lb thick-cut salmon fillets1/4 cup maple syrup2 garlic cloves 2 tsp grated ginger1 tsp olive oil 1 tsp kosher salt 1 tsp black pepper 2 tbsp light brown sugar
Directions
Heat oven to 350°F.
In a food processor, combine syrup, garlic, ginger, salt, pepper and olive oil until well combined.
Spray a shallow, glass baking dish with non-stick cooking spray.
Place fillets in dish, skin-side down.
Pour the sauce over the fillets, completely covering them.
Sprinkle lightly with brown sugar.
Bake 20-30 minutes, until the sugar has caramelized.
