* 1 lb. boneless skinless chicken breast ( cut into 1/2 inch cubes) * 1 med. onion * 1/2 tsp garlic * 1 TBSP veg. oil * 2 cans ( 15-1/2 ounce each) great northern beans ( rinsed and drained) * 1 can ( 14- 1/2 ounces) chicken broth * 2 cans ( 4 ounces each) chopped green chilies * 1 tsp. salt * 1 tsp. ground cumin * 1 tsp. dried oregano * 1/2 tsp black pepper * 1/4 tsp. cayenne pepper * 1 cup ( 8 ounces) sour cream * 1/2 cup light whipping cream
In large saucepan, saute chicken, onion, and garlic powder in oil until chicken is no longer pink. Add beans, broth, chilies, and seasonings. Bring to a boile;. Reduce heat; simmer, uncovered for 30 minutes. Remove from heat; stir in sour cream and whipping cream. yield 6 servings

Love it! My kids even love it! It is in our regular rotation. I use fresh garlic and fat free half and half (sometimes). I also use shredded chicken instead of diced. You cannot beat the ease and versatility! I have slow cooked, pressure cooked, and done it on the stove. All have turned out excellen - 8/16/10
