Nachynka, Ukrainian Cornmeal Souffle

Ingredients
CORNMEAL MIXTURE:1 Cup Yellow Cornmeal1/3 Cup Margarine (or shortening)1 Tsp Allspice1 Tsp Salt1 Tsp Granulated Sugar4 Cups Skim Milk (traditionally homo milk)1 Small Onion - chopped very fineEGG MIXTURE:3 Eggs1 Cup 1% Milk, Scalded (traditionally CREAM)
Directions
Preheat oven to 350*F.

Melt margarine in large sauce pan.
Add onion, sauté until clear.
Add Cornmeal, allspice, salt and sugar.
Slowly add Skim Milk.
Turn to LOW and cook approx. 20-30 min until thick, constantly stirring.

Meanwhile, beat eggs until frothy.
Add 1% milk.

Remove Cornmeal mixture from heat and fold in egg mixture.
Pour into casserole dish and bake at 350*F for 60 minutes.
