Cheesy Broccoli Soup

Ingredients
1 Tbsp. Coconut Oil4 cups fresh chopped broccoli1 onion, chopped6 oz. soy cheese4 c. rice milk2 tsp. fine sea salt1 tsp. black pepper1.2 cups vegetable broth5 tbsp. corn starch dissolved in 1/4 c. water
Directions
Makes about 8 2 cup servings

Melt coconut oil in stock pot
Add chopped onion and cook until tender, about 3 minutes
Add chopped broccoli and cook until crisp tender, about 3 minutes
Add vegetable broth, salt and pepper and bring to a boil
Cook until broccoli is very tender, about 10 minutes
Remove from heat and stir in one cup rice milk
Pour contents into a blender and puree until smooth
Return to heat, add remaining 3 cups rice milk and corn starch mixture.
Stir in cheese, simmer until thickened to your liking and cheese is melted.
