Ingredients
6 Pork Meatballs6 Cherry Tomatoes1 egg2 tablespoons Chopped/Sliced Yellow Onion2 tablespoons Sweet Chili Sauce 2 tablespoons Mushroom Soy Sauce2 teaspoons of Herbs de ProvencePinch of salt/sea salt to taste, optional and not calculatedPinch of pepper/freshly ground black peppercorns to taste, optional and not calculated
Directions
Add a little butter to a pan, fry up meatballs for about 4 minutes on medium heat, turning often. Add 1 egg to same pan, scramble. Add in your chopped onion. Add in 2 tablespoons of mushroom soy sauce (or 1 tablespoon of normal soy sauce, if you prefer, I think it makes it too salty to use regular soy sauce though). Stir. Add in 2 tablespoons of the sweet chili sauce. Stir. Lastly, add in the Herbs de Provence. Stir. Continue cooking until the egg is as fried as you like it (I like my things well-burnt). Top with salt/pepper as you wish, stir, and dump on a bed of fresh spinach. Top with the cold cherry tomatoes to give your mouth a refreshing bite!
