4 medium onions, diced12 stalks celery, diced2.5 tablespoons olive oil (more or less to taste)1/2 teaspoon salt, optional (nutrition info includes it)12 servings (300g) stuffing mix (I used Marcy's Gourmet this time, but any is fine)2.5 cups or so stock
Preheat oven to 350. Cook onions and celery in olive oil and salt until they're very soft, but not browned. Toss with stuffing mix. Add stock. Put into an ovenproof dish and bake 30 minutes or so until browned on top and heated through.
