Looney Spoons Kaleslaw Salad

Ingredients
4 cups chopped kale (stem removed)2 cups chopped red cabbage1 cup grated carrot1/4 cup chopped green onions (use top to bottom)1/3 cup pumpkin seeds (pepitas)1/2 cup craisinsDressing6 TBS olive oil3 TBS apple cider vinegar3 TBS lemon juice3 TBS maple syrup (or more as desired)dash of saltfresh ground black pepper
Directions
Chop the kale, removing the ribs and discarding.
Make the dressing. Take 1/4 of the dressing and massage it into the kale for about 5 minutes. Yes, just get in there with your hands and keep mixing and massaging it. This is what makes it tender and so delicious. Add the cabbage, carrots, green onion, pepitas and craisins. Add more dressing as desired.
