Mirepoix Asian Soup - Low Carb

Ingredients
3 large cloves garlic, minced1.5 large onions, chopped. set aside 1 cup6 carrots, scrubbed and chopped into medallions6 celery stalks, scrubbed and chopped2C spinach, chiffonaded (skinny strips)1 hormel beef smoked sausage, chopped1lb cod, cubed3T butter3T fish sauce3T sambal olek2 boxes broth (chicken or beef or veg)1 can coconut milk (ingredients should only be coconut and water)Saute 1C of onions in butter. Once translucent, add garlic, stir 45 seconds. Add beef sausage and saute until browned. Add broth, remaining vegetables, and cod. Bring to a boil, turn down to a simmer. Simmer 10 minutes. Add Spinach. Add coconut milk

Bring to a boil, turn down to a simmer. Simmer 10 minutes. Add Spinach. Add coconut milk. Add more or less sambal olek and/or fish sauce to suit tastes.
