Couscous Tabouli

Ingredients
1.5c Couscous (dry)2c Boiling Water2 tsp Salt2 tsp Minced Garlic1/4 c Lemon Juice1/4 c Olive Oil1c Chopped Fresh Parsley (Packed)2 Tomatoes, diced1 Cucumber, cubed1 Bell Pepper, chopped1 Carrot, grated
Directions
Pour boiling water over couscous and let sit for 5 minutes. Add salt, garlic, lemon and olive oil and refrigerate for about 2 hours or until chilled. Before serving, mix in parsley and vegetables. Adjust seasoning if necessary.
