Chicken Vegetable Stir Fry

2 tbs vegetable oil2 lbs boneless, skinless chicken breasts(sliced fairly thin)1/3 C water1 tbs cornstarch1/4 c soy sauce1 tbs sugar1 onion, diced2 stalks celery, chopped2 carrots, sliced1 stalk Broccoli, chopped2 zucchini, chopped1 c mushrooms, sliced
Heat 1 tbl oil in frying pan. Add chicken and cook over medium heat until done; remove from skillet and set aside. In a small bowl combine water and cornstarch. When cornstarch is dissolved, add soy sauce and sugar; mix well and set aside. Heat remaining oil in skillet, add onion and cook until translucent. Add celery and carrots; cook 3 minutes. Add broccoli and zucchini; cook 2 minutes. Add mushrooms; cook 2 minutes more. When vegetable are cooked, add cooked chicken and sauce mixture and heat through. Serve over steamed rice
