Nancy's Shiitake! Soup

4 cups vegetable broth (homemade or storebought)4 cups water (or extra broth)3 cloves Garlic, minced1 cup onions, chopped1/4 cup Ginger Root, peeled & sliced (1/2" diameter or more or less, according to how much you like ginger)8 Shiitake mushrooms1 TBSP Westbrae Natural White Miso1TBSP tamari or soy sauce2.6 ounces Somen Rice Noodles (one bundle out of a 3 bundle pack that total 8 oz)
Saute minced cloves and onions in a big soup pot with 1/2 cup broth until they are softened. Add more broth as needed. Add ginger slices and mushroom. Cook about 2 minutes. Add remaining broth and all of the water. Stir in tamari & miso. Cook for 25 minutes.
Break the bundle of noodles to the size you want. Stir into soup. Cook for another 5 minutes. Done
