400 grams Eggplant, fresh, 15 grams Ginger Root, 15 grams Chopped Garlic, 100 grams Raw Diced Onions, 1 can Hunt's Fire Roasted Diced Tomatoes w/Garlic - 15 grams MDH Baingan Bhartaa Masala, 1/2 cup green peas, (I use frozen, but you can use fresh.
Roast your eggplant in the oven or microwave until it is soft. Ten minutes will do in the microwave. Then peel and dice it.
Heat the oil in a skillet and fry the ginger and garlic until they start to brown.
Add the onions until they start to turn golden.
Add the can of tomatoes and cook until they are soft.
Add your eggplant and peas, and sprinkle the spice mix on top while mixing well. You can add a bit of water if it gets to thick. Continue stirring over the heat until it is hot, brown and delcious!
Serving Size: Makes plenty for four, and will serve 6 with a salad or side.
