Mexican Bean Salad

Ingredients
16 oz can Garbanzo beans 15 oz can Black beans1 diced red or yellow pepper2 chopped tomatoes (or can organic diced tomatoes drained)1/2 C chopped green onion1/2 C chopped celery1/4 C chopped cilantro 1T Walnut (or olive) oilJuice of 1 lime1/2 tsp. Cumin Powder1 T Garlic Pastesalt & pepper to taste
Directions
drain & rinse beans

add remaining ingredients & mix well

add salt * pepper to taste

serve over 1 cup salad greens of your choice

Serving Size: makes 2 servings - about 3 cups each
