Low fat curry chicken

Ingredients
3 boneless, skinless chicken breast cut into chunks1 tbsp of dried thyme1 bunch of green onion, chopped3 large carrots, sliced1 tbsp of crushed garlic1 tsp of olive oil2 tbsp of curry powderI cup of water2 bags of Uncle Ben's boil-in-bag rice
Directions
Cut chicken breast in chunks and boil for 10-15 minutes; remove, drain, and set aside in a bowl
Cut onion. Heat olive oil, add onion and garlic and saute for approximately 5 minutes. Cut carrots and add to bowl with chicken. Add thyme and curry powder and mix well. Add chicken mixture to pan/pot with onions over medium heat and turn frequently for 5-7 minutes. Add water, stir until mixed well, cover and cook for 20-25 minutes. You may want to add more curry powder according to your taste. After 10 minutes prepare rice following the package instructions. Serve curry chicken over rice.
