cheesy, veggie egg scramble

Ingredients
1 egg1 egg white1/4 cup milk 1/4 cup chopped broccoli1/4 cup chopped mushrooms1/4 cup diced tomatoe1/4 cup chopped spinach1/4 cup shredded cheese2 tbsp salsa1 slice of whole grain bread, toasted 1 tbsp peanut butter pinch of saltpinch of cracked pepper
Directions
mix egg, egg white and milk, season with salt and pepper. Scramble eggs over med-low heat. Right before eggs are done add veggies and cook for 1 min over med-low heat, stirring. Add cheese, cover for 1 min or until melted. Top with salsa and serve with 1 slice whole grain toast/peanut butter.

    I havn't made this but next time I go grocery shopping I will buy the ingredients. It looks good! Only thing I would leave out is the peanut butter. - 3/24/08
