Tofu Sandwich Spread (Mock Egg Salad)

Ingredients
1 block firm tofu 1 stalk celery, chopped 1 green onion, chopped1/4 cup regular or vegan mayonnaise2 tablespoons soy sauce 1 tablespoon lemon juice2 tablespoons mustardOptional:CurryTurmericPicklesPickle juiceDIRECTIONS:1. Drain the block of tofu, and freeze overnight. Thaw, and cut into quarters. Squeeze out any moisture by hand, then wrap in paper towels, and squeeze again. Crumble into a medium bowl.2. Add celery and green onion to the tofu. Stir in mayonnaise, soy sauce, mustard, and lemon juice until well blended.3. Add curry if desired.4. Add turmeric for added 'yellow' color.5. Add pickles if desired.

    Unbelievable recipe!! I used 1/2 cup of mayo. and instead of using the "optional ingredients" I added sea salt, black pepper, a pinch of smoky paprika, ground red pepper, and a sprinkle of sesame seeds. Grab your forks, people. You will be hooked from the very first bite. - 3/4/14
