Spanish Pork Chops

Ingredients
1 15 oz can Hunt's Tomato Sauce1 can Del Monte Petite Diced Tomatoes1 Can Mushrooms4 Pork Chops (lean, boneless)1/2 tsp black pepper1 tsp garlic powder1 Large onion
Directions
1. Remove excess fat from pork chops.
2. Spray pan lightly with cooking spray, sprinkle pork chops with pepper and brown them on both sides.
3. Meanwhile, slice onions.
4. Add onions, mushrooms, tomatoes, tomato sauce, and garlic powder to pan with pork chops.
5. Cover and reduce heat to medium. Cook until pork chops are done and onion is soft (about 20-30 minutes.

    We really enjoyed this dinner. I did change it a bit. I sauteed onions, bell pepper, mushrooms and half of a jalapeno pepper in olive oil. Then I browned the peppered pork chops, put them in a baking dish with the veggies & tomatoes & baked at 350 for 20 minutes. - 4/19/10

    changed it: cooked chops seperate so onions could be sauteed in wine and added chilli powder and red pepper flakes and dash of balsamic vinegar. Then combined once chops were browned and cooked for 25 minutes. Served with mashed potatoes/cauliflower mix. - 1/25/09

    Very easy to make & very tasty! I made this with red beans & rice to go on the side but didnt end up eating the rice because it was so filling with so much sauce! I cant wait to share this recipe with my fam and maybe even impress my spanish mother in law lol - 7/1/08
