Ingredients
4 oz uncooked whole wheat elbow macaroni4 wedges Laughing Cow Light cheese1-2 TBLSP milksalt, pepper to taste
Directions
Makes enough for 2

Cook the elbows according to package directions. Drain almost, but not until totally dry and add the unwrapped Laughing Cow Light wedges, the milk, salt, pepper and stir.

    I made sure to use skim milk and I also added some diced onions, garlic, and a dash each of ground red pepper and cracked black pepper to jazz it up a bit (my mom does that with the reg. mac n' cheese she makes and it makes it delish!). Took this recipe to the next level of yum! - 4/9/12

    This was great! Watching my weight I gave up the mac and cheese and was sad. BUT! This was super! I am really glad you shared it. I didnt use the whole wheat pasta as hubby isnt a fan but I will make smaller servings for me with it. I did add some skim milk to it as well. It was tasty! - 12/13/10

    It had a good flavor. I guess my tastes have changed, because I am think I now get more flavor and pleasure from a side garden salad.

    Although - if you really want a mac & cheese fix, this is not a bad option. - 5/27/08

    LOVED it! I've made it twice already. The second time I had left over chicken breast and green beans and I tossed them in the mac and cheese mixture. It was definitely more filling, but the "essence" of the mac and cheese was gone. It was still very good but tasted more like casserol. - 4/7/08

    I think Akasha66 is onto something here. I used fiberwise pasta (12 g fiber). Maybe it needed a bit more oomph so I added a little parmesan as well. - 4/4/08

    This was a really great idea. I don't think it would have ocurred to me to make macaroni and cheese this way. I loved it and so did my kids. WAY better than the Lean Cuisine macaronni and cheese I've beed doing. I got 3 servings out of it. - 3/30/08

    Wow, this was really good!! So easy to make and tasted so much better than the processed box kind! I only used 4 wedges of the cheese as that seemed to be enough, although I added a little more milk as I don't think I left enough water in there. Plus I only got one serving out of it as I ate it all! - 3/1/08
