Ingredients
whole wheat pasta1 zucchini1 yellow squash1 onion3 garlic cloves1 can diced tomatoes
Directions
Boil water for noodles and cook until al dente.
Cut up zucchin, squash, garlic and onion and cook over medium heat until crisp tender. Then add diced tomatoes and simmer.
Serve 1 cup of veggies over 1 cup of noodles (per serving)

    You are right. Simple and yummy and a good way to use up an overabundance of zucchini and summer squash. I added some Italian spices and some romano cheese. - 7/30/10

    Thanks for the idea. I roasted summer squash and zucchini along with cherry tomatoes and added it to some jarred tomato and basil sauce for a wonderful whole wheat pasta topper. - 6/12/09
