4-4 Oz. fresh or frozen cod, nonstick spray, 3 Tbl. seasoned fine dry bread crumbs, 3 Tbl. cornmeal, 1/4 Tspj. celery salt, dash ground red pepper, 1 Tbl. olive oil, 1 egg white slightly beaten.
Thaw fish if frozen. Rinse and pat dry with paper towels. Measure thickness of fish. Spray a shallow baking pan with nonstisck spray coating and set aside. Stir together bread crumbs, cornmeal, celery salt, and red pepper. Add oil, tossing to combine. Brush one side of each fish fillet with egg white,then dip in bread crumb mixture. Place fish fillets, crumb side up, in a prepared pan. Bake uncovered in a 500 oven 8 MIn. for each 1/2" thickness of fish or until it flakes easily when tested with a fork.
