Olive Oil, .5 tbsp Onions, raw, .75 cup, chopped Celery, raw, .75 cup, diced Garlic, 2 clove Canned Tomatoes, 3.75 cup = Crushed - 28 oz canVegetable Broth, 3 cup Milk, nonfat (skim milk), 1 cup Lentils, 1/2 cup dry*Brown Rice, long grain, 2/3 cup cookedCilantro, fresh, 2 tbspSalt, .5 tsp Other herbs to taste.
In a 3 qt non-stick pan, heat oil. Add onion, celery and later garlic. Sauté until tender. Add tomatoes, broth, lentils, rice. Simmer about 20 minutes, stirring occasionally. Stir in herbs, milk, and salt.
