1 tbsp peanut oil1 shallot1/4 cup chopped onion4 tbsp earth balance1/2 tblsp ginger paste1 tblsp garlic paste1 tsp garam masala1 tsp chili powder1 tsp cumin1 bay leaf1 can coconut milk1 cup tomato paste1 cup veggie broth1/4 tsp cayenne 2 cans chickpeas
Sweat shallot and onion in peanut oil over medium heat. Mix tomato paste and veggie broth in seperate bowl. Add ginger paste, garlic paste and spices to onion and shallot. toast for 1 minute. Add tomato sauce and coconut milk. When incorporated add 2 cans drained chickpeas and warm through.
