Oatmeal Apple Muffins

Ingredients
Whole Wheat Flour, 1 cup Quick cooking oats (not instant) 1 cupBrown Sugar, packed, 3/4 cupBaking Powder, 2 1/2 tspBaking Soda, 1/4 tspSalt, 1/4 tspNutmeg ground, 1/4 tspCinnamon ground, 1/4 tsp1% Buttermilk, 1 cupLarge egg, beaten with fork, 1Canola Oil, 2 tbspMedium Apple, peeled, diced 1
Directions
Combine first 8 ingredients in large bowl. Make a well in center.
Combine next 3 ingredients in small bowl. Pour into well. Add apple. Stir just until moistened.
Spray muffin cups with no-stick cooking spray. Measure about 1/4 cup (60 ml) into each cup.
Bake in 375'F (190'C) oven for 15-18 minutes until wooden pick inserted in center of muffin comes out clean.
Cool in Pan for 5 minutes before turning out.

Serving Size: makes 12 muffins (1/4 cup in each muffin tin)
