Carrot Ginger Soup

Ingredients
1 tbsp olive oil1.5 cups of onion, chopped4 cups carrots, chopped3 celery stalks, chopped1.5 tbsp ginger, grated4 cups chicken broth, no salt added Campbells2 cups of water
Directions
cook onion in oil for 5 mins. Add remainder of ingreds, bring to boil. Reduce heat, simmer for 30 minutes. Puree. Heat again. Enjoy!
