Healthy White Lima Beans

Ingredients
1 lb. dry large white lima beans (Camellia brand used)2 stalks of celery, chopped1 medium onion, chopped2 cloves garlic, minced1 cup of chopped carrots2 cups of baby kale1 teaspoon salt, or to taste1/2 teaspoon black pepper, or to taste1 tablespoon dry parsley
Directions
Rinse and sort the beans. Place in a large pot and cover with water. Bring to a boil. Reduce heat slightly and boil until beans are tender and will mash. Mash some of the beans and stir in the other ingredients. Bring back to boil, cover, reduce heat to low and cook for at least another hour. You don't want the bean mixture to be watery. We cook ours for 3-4 hours, stirring occasionally and adding water if necessary.
