Banana Apple Muffins - Gluten Free, Lowfat, Low Sugar

1.5 cups gluten free flour mix.5 cup sweet rice flour.5 tsp xantham gum4 tsp baking powder1 tsp cinnamon1/4 cup Truvia or Splenda sugar blend1 large banana mashed2 TBSP coconut oil1 cup 1% milk1 tsp vanilla extract2 large eggs3/4 cup chunky applesauce1/4 cup sliced almonds, chopped further1/4 cup raw sugar
Preheat oven to 350 degrees.
Mix dry ingredients together first (leaving out almonds and raw sugar). Mix banana, coconut oil, eggs, milk and vanilla extract together separately. Once mixed add to dry ingredients. Add applesauce. Pour into muffin pan (makes 12 muffins). Chop sliced almonds and mix with raw sugar - then sprinkle over each muffin. Bake for 30 mins at 350 degrees F.
