Lemon Thyme Chicken

Ingredients
6 chicken breasts, skinless and boneless1/2 medium onion2 tbsp olive oil1 fresh lemon1/4 cup white flour2 tsp black pepper6 sprigs fresh thyme or 2 tbsp dried thyme
Directions
Grease bottom of porcelain baking dish with olive oil and preheat oven to 350 degrees Fahrenheit. Chop thin onion slices and lay in the dish with the olive oil.

In a bag combine flour and freshly ground pepper. Toss chicken breast in bag until lightly covered, remove then lay in baking pan.

Use a fine grater to zest lemon on top of chicken breast, then make thin slices of lemon to lay over the chicken breast. Add fresh thyme sprigs on top and put in the oven for 45 min to 1 hour or until chicken breast is thoroughly cooked. Serve. 6 servings, sauce is great over vegetables.
