15 soft taco size tortilas1 lb Chicken Breakfast Sausage1 dozen EggsOne onion, diced1 Bell Pepper, diced1.5 cups shredded cheddar cheese1 can Rotel (diced tomatoes with green chilies)
Cook onions, bell pepper and chicken sausage in skillet over medium heat until well cooked.
Scramble eggs.
Combine sausage and veggies with eggs and can of Rotel. Place 1/15 of egg mix in each tortilla with a tablespoon of cheese. Roll up and wrap in saran wrap, freeze.
To reheat - unwrap from saran wrap, roll in paper towel. Microwave for a minute, turn over, microwave for another 30 seconds. If not hot, microwave for another 30-60 seconds.
Serving Size: Makes 15 burritos
