Vegetarian Mushroom Soup

Ingredients
1 medium yellow onion9 cups of diced mushrooms, coarse2 Tbsp Extra Virgin Olive Oil3 oz tequilawater to cover
Directions
Dice onion
Place in large pot with oil
Cook until soft
Add diced mushrooms and smashed garlic
simmer until soft
Add Salt, pepper, paprika, bouillon, tequila and water to cover.
Cook 30 minutes until al dente
At this point you can put it in a food processor and "cream" it to make cream of mushroom soup...
