Black Beans & Rice

Ingredients
5 C Black beans, dry2 C chopped onion1 T minced garlic1.5 C Green bell peppers, chopped2 T Lemon juice2 tsp salt1.25 C cooked short grain brown riceToppings:Mild salsaShredded cheddarSour cream
Directions
Soak beans overnight. Cook until tender. When beans are almost done, add the vegetables. 5 minutes before serving, add salt and lemon juice. Serve over hot brown rice and finish with your choice of toppings.
