Low carb meringue cookies

Ingredients
4 large egg whites1/2 teaspoon cream of tartar1 cup erythritol (powdered is best)1/2 teaspoon pure vanilla extract1/4 teaspoon salt
Directions
Separate egg whites
Makes sure eggs are room temp, very important. Note, eggs separate better cold so separate them then leave whites out to warm up.
If you don't have powdered erythritol then put into food processed for about a minute first
Whisk eggs, salt, cream of tarter and vanilla
Slowly add in erythritol and whip until stiff peaks
Either spoon or pipe onto parchment lined baking sheet
Bake for 1.5 hours at 200. Leave in oven for a few more hours or overnight. Remove and enjoy.
