2 tab. olive oil1/2 onion, diced2 garlic cloves, minced1/2 teas. cumin1 cup diced tomatoes, fresh or canned1 Knorr tomato bouillon cube3 cups brown rice, cooked
Heat oil in pan, add onion and saute until soft. Add garlic and cumin cook another minute. Add rice and saute 3-4 minutes. Stir in diced tomatoes and bouillon cube. Stir and bring to a simmer. Reduce heat, cover and simmer for 15-20 min. stirring occasionally, until the liquid is absorbed.
