Gluten/Dairy Free Snickerdoodles

Ingredients
2.75 cups Namaste Perfect Flour Blend1.5 cups Baker's Sugar (Granulated sugar works too).5 cups Coconut Oil (soft-solid works best... like soft butter).5 cups Avocado Oil2 large eggs2 tsp cinnamon2 tsp baking powder.5 tsp salt4 tbsp sugar (for coating cookies)3 tsp cinnamon (for coating cookies)
Directions
You will need two mixing bowls and an electric mixer. Start by putting flower blend, cinnamon, baking powder and salt in a bowl and mix thoroughly. In a separate bowl combine sugar, coconut oil and avocado oil. Mix/creme oil and sugar. Add eggs and vanilla. Mix some more. Next add your flour to the mix and blend thoroughly

Serving Size: makes approximately 40 Cookies (using .75 tbsp scoop)
