Sesame Noodles with crunchy vegetables

Ingredients
4 ounces whole wheat angel hair pasta1 cup red peppers chopped1 cup snow peas, blanched2 scallions chopped2 T canola oil2 T rice vinegar2 T soy sauce1 T sesame oil1/4 C reduced fat peanut butter, creamy1/4 C warm water1 T honey1 garlic clove, minced1 tsp. grated ginger root1 T sesame seeds toasted
Directions
Makes 4 servings.

Cook pasta in boiling water for 6 minutes. During last three minutes of cooking throw in snow peas to blanch. Drain and put in large bowl. Add peppers, and scallions.

Whisk together next nine ingredients and pour over warm pasta. Toss well to coat. Sprinkle with toasted sesame seeds and serve warm.
