Ingredients
1.5 cups of corn meal0.25 cup of oat bran0.25 cup of NOW Pea Protein (unsweetened)1 tbsp coconut four1.25 cups of milk (nutrition info for whole milk)1 tbsp white vinegar2 large brown free range eggs3.5 tbsp of unsalted butter0.5 tsp salt1.5 tsp baking powder1 tbl granulated sugar
Directions
Preheat oven to 375.
Mix dry ingredients.
Mix wet ingredients.
Mix wet ingredients into dry ingredients.
Spoon into muffin tin.
Bake at 375 F for 28 minutes.
