Banana pancakes

Ingredients
Banana - 1, small.1/4 cup milk1/4 cup flour1 egg1/2 tsp vanilla extractStrawberries (optional. Can also use other add ins)Margarine, or cooking spray
Directions
1.- puree half of the banana.
2.- mix in the 1/4 cup flour, 1/4 cup milk of chice (I used skim milk), egg (you could substitute two egg whites for a lower calorie count), and the vanilla extract. Mix thoroughly, until no lumps are left.
3.- cut strawberries (if using, or you could just leave them whole and use them as toppings)
3.- heat pan on stove, and put some margarine or cooking spray to keep from sticking.
4.- pour batter on pan, and cook until bubbles appear on the side facing you.
5.- if you wish, you can add some strawberry slices and banana slices (or other add ins such as blueberries, chocolate, etc) and flip pancake. If not, simply flip.
6.- if you didn't use the strawberries or banana in the batter, you can use them as toppings. Or top with whatever you prefer. Syrup, butter, etc. I personally love using a wedge of laughing cow cream cheese.
7.- enjoy!
