8 cups chicken stock20 kaffir lime leaves4 inch piece ginger, sliced8 3-inch pieces lemongrass (white part), bruised or rough chopped8 thai red chilis, sliced in half (remove seeds if less heat desired)3/4 cup fish sauce1/2 cup lime juice2 cups mushroom pieces6 oz. rice vermicelli12 ounces chicken breast meat, cut in thin strips2 cups coconut milkChopped fresh cilantro
Put chicken stock, lime leaves, ginger, hot chilis, lemongrass, fish sauce and lime juice into large pot. Bring to a boil and simmer 10 minutes. Strain out solids.
Add chicken, vermicelli and mushrooms. Return to boil until chicken is cooked through. Add coconut milk. Serve warm with fresh cilantro.
