Ingredients
1/2 cup crushed pineapple1/2 cup fat-free vanilla Greek yogurt 1 pineapple, peeled, cored, and chopped6 clementines, peeled and segmented1 pint strawberries, hulled 1 cup seedless green grapes 1 cup blueberries
Directions
Combine the crushed pineapple with the vanilla Greek yogurt in a small bowl and set aside.
On a large platter, arrange the fruit one color at a time, beginning with the pineapple, then the oranges, strawberries, grapes, and blueberries.
Place the dip in the center of the "rainbow."

Serving Size: 8 servings; 2 T dip plus 1/2 cup fruit

    If you want it to look more like a real rainbow, try putting the colors of fruit in natural rainbow order: red, orange, yellow, green, blue, purple (red grapes perhaps). Love the idea of a "pot of gold" at the end, I hadn't tried that before. - 3/5/14
